Savory cake : goat cheese, spinach & dried tomatoes
As good for a meal, a lunchbox or even an aperitif, this salty cake recipe is a must!
Today I offer you a gluten-free version, simple to make ✨
Ingredients for 4 people:
For the base of the cake :
🥚 4 eggs
🌾 140g chickpea flour (or other flour)
🌾 40g gluten-free oat flour
🥄 6g baking powder (optional)
🥛 100ml (here unsweetened almond milk)
fillings :
🥬 400g fresh spinach
🧂 Salt, pepper
🍅 5 sun-dried tomatoes
🧀 1 goat log
1. Preheat your oven to 180C rotating heat.
2. Cook the fresh spinach, previously washed and drained, in a pan.3. Meanwhile, beat the eggs. Add the flours (baking powder) and milk. Cut the tomatoes into strips, add the cooked spinach and the goat cheese cut into cubes.
4. Pour the batter into a lined cake tin.
5. Add a few slices of goat cheese on top of the cake.
6. Bake for 40 min. Insert the tip of a knife to check for doneness.
