Gourmet and creamy tart

A very light and delicious tart
The preparation steps in the real ones.



Ingredients for the dough:


- 200g T55 or T45 flour
- 2 egg yolks 
- 70g melted butter
- 70g sugar
- 4g baking powder
- 1 pinch of salt


Ingredients for the cream in the middle:


- 2 egg whites
- 50g of sugar
- 400g of natural yoghurt = 4 pots of yoghurt
- 35g of cornstarch
- 2 sachet of vanilla sugar
- 120g of blueberries


Preparation of the dough:


In a bowl, mix the egg yolks and 70g of sugar and add 70g of melted butter, mix well, then add the flour, salt and baking powder.

Mix everything until you obtain a sandy preparation, pick up with your fingers.

Make 2 balls, one a little bigger than the other, spread the large ball in a lined mould, place it in the fridge for at least 1 hour.

 The other, wrap it in cling film and place it in the freezer for 1 hour (for me all night) 


Preparation of the cream:


Before taking the dough out of the fridge, in a bowl, mix the 400g of yogurt with the vanilla sugar and the cornstarch set aside.

In another bowl, whisk the egg whites

Then add it to the yogurt mixture, mixing gently, then add the blueberries.

Take the dough out of the freezer 1 hour before assembling the tart.

Place the yoghurt cream on the dough in the mold, then grate the dough taken out of the freezer and cover the entire surface with the cream.

Bake for 25 to 30 minutes at 170° Remove

from the oven and after total cooling sprinkle with icing sugar (optional)
